I don't really have a recipe for the potatoes, I kind of just wing it. I basically slice about 6 medium potatoes really thin and layer them in a butter greased glass rectangle dish. After each layer I sprinkle over some salt, pepper, some minced garlic, onion powder and a bit of shredded cheddar and a sprinkle of parmesan. At the last layer before I put on the cheeses, I pour over about 1/2 cup of milk mixed with 1/2 cup of condensed milk until the potatoes are just covered. Add the last cheese layer and then put in a 400 oven for about 40 minutes.
For the pork chops, mix 2 tbsp maple syrup, 3 tbsp dijon or grainy mustard, 1 tbsp olive oil, and 1 tsp coarse black pepper. Spread evenly over all sides of you pork (chops, loin, etc...) place on a small greased cookie sheet or pan, and bake at 400 for 20 mins or until cooked through. Use any sauce left in the pan to drizzle of your pork when you serve it.
